
A feel-good twist on a classic – rich in flavour, simple to make, and powered by our Enriched Oat m*lk for extra calcium, vitamins, and nutrients.

Ingredients
- 4 large eggs
- 300ml Plenish Enriched Oat m*lk
- 2 tbsp maple syrup
- 2 tsp vanilla extract
- 2 tsp matcha powder
- 1 tsp cinnamon
- 8 slices of sourdough or brioche
- Butter or coconut oil, for frying
- 8 tbsp coconut yoghurt
- Mixed berries (blueberries, raspberries, strawberries) * Extra maple syrup, to serve
Method
- Whisk together eggs, Plenish milk, maple syrup, vanilla, matcha, and cinnamon in a shallow bowl until smooth.
- Heat a little butter or coconut oil in a pan over medium heat.
- Dip each slice of bread into the mixture, letting it soak for a few seconds on each side.
- Cook for 2–3 minutes on each side until golden brown and crisp.
- Serve with a dollop of coconut yoghurt, fresh berries, and a drizzle of maple syrup.
