Vanilla Matcha French Toast with Coconut Yoghurt & Berries

Ingredients

  • 4 large eggs
  • 300ml Plenish Enriched Oat m*lk
  • 2 tbsp maple syrup
  • 2 tsp vanilla extract
  • 2 tsp matcha powder
  • 1 tsp cinnamon
  • 8 slices of sourdough or brioche
  • Butter or coconut oil, for frying
  • 8 tbsp coconut yoghurt
  • Mixed berries (blueberries, raspberries, strawberries) * Extra maple syrup, to serve

Method

  1. Whisk together eggs, Plenish milk, maple syrup, vanilla, matcha, and cinnamon in a shallow bowl until smooth.
  2. Heat a little butter or coconut oil in a pan over medium heat.
  3. Dip each slice of bread into the mixture, letting it soak for a few seconds on each side.
  4. Cook for 2–3 minutes on each side until golden brown and crisp.
  5. Serve with a dollop of coconut yoghurt, fresh berries, and a drizzle of maple syrup.
