
A fresh take on a nourishing breakfast favourite. Creamy chia pudding layered with sweet-salty miso caramel and juicy mango compote – it's a flavour-packed and dish made with our Enriched Oat m*lk for extra calcium, vitamins, and nutrients.

Ingredients
For the Chia Pudding
- 500ml Plenish oat or almond milk * 8 tbsp chia seeds
- 2 tbsp maple syrup
- 1 tsp vanilla extract
For the Vegan Miso Caramel
- 200g brown sugar
- 80g coconut oil or vegan butter
- 4 tbsp white miso paste
- 4 tbsp water
For the Mango Layer
- 4 diced mangoes
- Zest of 2 limes
Method
Stir chia seeds, Plenish milk, maple syrup, and vanilla in a jar. Let sit for 10 minutes, then stir again. Refrigerate for at least 2 hours or overnight.
Heat brown sugar, coconut oil (or vegan butter), miso, and water in a small pan over low heat, whisking until smooth. Remove from heat and let cool slightly.
Mix diced mango with lime zest.
Layer chia pudding, mango compote, and a drizzle of vegan miso caramel in serving glasses.
